Aiko Street Food began as a pop-up concept for Chef Ryan Mateling to begin creating his own dishes inspired by his Japanese heritage.
As popularity grew in the Detroit area, requests for private events came in from across Michigan and the Midwest.
You can find Chef Ryan's latest creations at the Aiko Street Food truck in his hometown of Michigan.
OUR HISTORY
Aiko is named after Chef Ryan Mateling's grandmother, meaning beloved child in Japanese.
Aiko was born on the West Coast and following her family's incarceration during WWII, they moved to the Midwest to start a new life.
Aiko adapted her family's Japanese traditions and culture to their new life in the American Midwest. Chef Ryan Mateling continues this tradition in every dish he prepares utilizing traditional Japanese preparation styles in dishes inspired by cultures from his home in the Midwest, to Asia, Europe, Mexico, and beyond.
Chef Ryan Mateling's philosophy features a fresh, local , modern, and sustainable approach to street food.
